Wiper and True is a new brewery based in Bristol. Previously a nomadic brewery but now with a more permanent home in St Werburghs they take ingredients and recipes to the brew house to make exceptional craft beers. To keep things interesting, they tend to make a different beer each time they brew.
Wiper and True’s beers are bottle conditioned. This means that instead of filtering out all of the yeast and injecting CO2, they leave the yeast in, which produces a secondary fermentation and as a result, a natural and light fizz and a more refined texture and mouthfeel.
