Having established ourselves as a fresh new voice in the mead market, we launched ‘Hive Mind’ to showcase our honey in a range of beers too. By brewing with malt and honey and conditioning on honey, the delicate flavours of honey shine through even when paired with punchy double hopped IPA’s. Balancing the hop and the honey is a fine art but there is space here to forge new ground and bring something new to the table.
We had been experimenting with creating a Braggot (a beer / mead hybrid) for some time. This is another example of a drink that time has forgotten and could do with modernising. After looking into the overwhelming range of relatively unexplored avenues, it became clear that this would be better suited to a whole range of drinks, rather than a standalone product.
